Dear readers, I have an exciting recipe for you today! But before I get to that specifically, some backstory is required. A few weeks ago, I was at the North Market (as I so often am). At the Farmer’s Market, I came across the most magically tasty product – a coffee spread called Café Butter. Now, some of you might have seen a quick shoutout I posted on Instagram so this might sound repetitive. I can promise you it’s worth the hype.

After taking my first jar of Café Butter home and enjoying it on toast, the wheels started turning. Peanut butter cookies are a classic, so why not try Café Butter cookies?

Now, I’ll be the first to tell you that egg free cookies are extremely easy. Even more than that, egg free cookie dough is totally safe to eat! That makes the dough easy to taste-test throughout the development process. Taste testing is what took these cookies from just Café Butter to Buckeye Mocha. I enjoyed the dough as it was, but it was also clear something was missing. So, I added semi-sweet chocolate chips and the result was pure gold. Check out the recipe below!
